Tuesday Night in My Kitchen-Grandma Kost's Greek Chicken





This recipe is a version of Greek chicken that was inspired by the super simple recipe my mom used to make me growing up that came from my grandma.  While it is not exactly the same, it is a modern & healthy version!


Ingredients: 
4, 8-oz. Chicken Breasts, boneless/skinless (preferably nitrate- and hormone-free)
3 Cloves Garlic, chopped
2 Lemons, juiced
1/2 Cup Water
1/2 Cup Extra-Virgin Olive Oil
1 TB Fresh Rosemary
1TB Fresh Thyme
1 TB Fresh Oregano


Cooking Instructions:
  • Preheat the oven to 400 degrees Fahrenheit 
  • Chop the garlic, rosemary, thyme, and oregano-set aside
  • Juice the lemon into a medium mixing bowl, then add the chopped items, olive oil, and water to the medium mixing bowl and whisk together
  • Wash the chicken and place it into a glass baking pan
  • Coat the chicken with the whisked mixture
  • Bake the chicken in the preheated oven for 1 hour or until a meat thermometer says between 160-170 degrees
